Now, I have a chocolate chip cookie recipe that I swear by. I love it, I think it is incredible, and I haven't changed my mind about that. However, as much as it pains me to say it, these chocolate chip cookies by Jacques Torres are absolutely, without a doubt, the best chocolate chip cookies that I have ever made or tasted in my entire life. I guess that's why they call him Mr. Chocolate! These are a chocolate chip cookie of another color, that's for sure. To begin, they use both cake flour and bread flour - that's right, there is no all-purpose flour to be found in these beauties. Secondly, the dough must, and I repeat, must, be refrigerated for a minimum of 24 hours. I know that this sounds strange for some chocolate chip cookies, but trust me. The combination of the flours and overnight refrigeration is extraordinary. The result is a chewy cookie with just the right amount of crisp around the edges. They are perfectly soft while still being just firm enough to stay together while you take them to work to share with co-workers, package them up to send to friends around the world, or squeeze them close so that nobody can pry them from your cold, dead hands. The other difference is that the recipe recommends that you use Jacque Torres chocolate disks, which can be found here. I, however, did not have these, so I used Guittard semi-sweet chocolate baking pieces that I chopped up, as well as Guittard 60% cacao bittersweet chocolate chips, which are actually very large and worked perfectly as a replacement. I really liked the different textures of chocolate, to be honest, so I recommend deviating from the original recipe just a tiny bit and using two kinds of chocolate, if you can.

Either way, I made these and everyone that tried them went nuts. I ended up making around 100 cookies, so I mailed some to a friend living in Seattle (who said that he ate them for dinner when he got them), brought some into my office, gave some to the doormen at work, and gave a bunch to Kramer to take into his office. The response was unanimous: best. cookies. ever. They disappeared from my office's kitchen in record time! People especially loved the salt and massive amounts of chocolate (surprise, surprise). These are the real deal, folks, so I really recommend setting aside an extra day to make your chocolate chip cookies and give these a try. I think that you will be as happy with them as we were.

Your ingredients. I doubled this recipe, hence the insane (or completely normal, if you know me) amount of butter.

Whisk together the cake flour, bread flour, baking soda, baking powder, and salt. Set aside.

Beat together the butter and sugars, until light and fluffy, at least 3 minutes.

Beat in the eggs, one at a time, followed by the vanilla. Scrape down the sides of the bowl as needed.

Add in the flour mixture, very gradually, until just moistened.

Fold in your chocolate.

Now, press plastic wrap down onto the top of the dough, being sure it is completely covered, and refrigerate for a minimum of 24 hours. I let mine go for about 36 hours, but you can let it go for as long as 72 hours. This is an important step!

Now, when you are finally ready to bake, preheat your oven to 350 degrees F and scoop the dough out onto greased and/or lined baking sheets. I used a #40 ice cream scoop, which is about the size 2 tablespoons. You can use something larger for monster cookies, which is always fun - it just depends on how many you want to bake. Sprinkle with a little sea salt and bake for 18-20 minutes for large cookies, or 10-12 minutes for smaller cookies (I think mine went for about 11 minutes).

Allow your cookies to cool for a few minutes on your baking sheets, then move them to another surface to finish cooling completely (although you may just have to try one warm - they are amazing).

Milk is, in fact, an essential component to enjoying these amazing cookies.

Total Prep and Baking Time: 1 hour 30 minutes, plus 24 hours to chill the dough
Yield: 18-20 large cookies (I used a #40 ice cream scoop, which is a bit more than 2 tablespoons, and got about 40 cookies)

2 cups minus 2 tablespoons cake flour
1 2/3 cups bread flour
1 1/2 teaspoons baking powder
1 1/4 teaspoons baking soda
1 1/2 teaspoons coarse salt
2 1/2 sticks (1 1/4 cups) unsalted butter, room temperature
1 1/4 cups light brown sugar, packed
1 cup plus 2 tablespoons granulated sugar
2 large eggs, room temperature
2 teaspoons pure vanilla extract
1 1/3 pounds bittersweet chocolate disks or f?ves, at least 60 percent cacao content (now, I did not have these, so I used Guittard 60% cocoa bittersweet chocolate chips, as well as about 1/2 pound of semi-sweet Guittard chocolate pieces, which I chopped - I loved the look and texture of this combination)
sea salt or fleur de sel, for sprinkling

1. Sift together the cake flour, bread flour, baking soda, baking powder, and salt into a medium sized bowl and set aside.

2. In the bowl of your mixer, cream together your butter and sugars until light and fluffy, about 3-5 minutes. Add in the eggs, one at a time, until combined, scraping down the bowl as needed. Add in the vanilla and mix. Gradually add in the dry ingredients, until just moistened. Fold in your chocolate until evenly added throughout the dough. Press plastic wrap against the dough, making sure it is completely covered, and refrigerate for at least 24 hours, or as long as 72 hours (I left mine for 36 hours).

3. When you are ready to bake, bring the dough to room temperature so that you can scoop it out, and preheat your oven to 350 degrees F. Line and/or grease your baking sheets. Scoop your dough out onto the sheets. I used a #40 ice cream scoop, which is about the size of 2 tablespoons, but you can make them even larger, if you like. Do not press the dough down - let it stay the way it is. Bake 10-12 minutes for smaller cookies (mine took about 11 minutes), or 18-20 minutes for larger cookies.

4. Allow the cookies to cool slightly on your baking sheet, then move them to another surface to cool completely. You can enjoy these warm, room temperature, or cold. Store in an air-tight container at room temperature for up to 3 days, or freeze for up to 2 months.

Owning a family business implies leadership no matter what your role in the business or even if you don?t work in the business.? Being a member of the owning family group carries the responsibility to provide leadership ? not in day-to-day direction of the business but in vision, values and strategy.

The ownership group needs leaders in the form of a chairman of the board and other directors who bring the needs of the business together with the wishes of the owners and the values of the family. The leadership of family directors moves the assets of the family forward in relation to moving the family forward. It has a foot in both arenas?family and business?and needs to have a great deal of understanding about both of those systems. On the family side, the board?s leadership is related more to the values and the goals of the family for the business than on relationships within the family. On the business side, it means translating family goals and values into forms that management can respond to and that represent the best interests of the owners. Management?s job is to meet the goals of the owners.

The chairperson of the board should be a real job and a real leadership challenge. It shouldn?t be used as a means of putting an aging CEO out to pasture. Frequently, family businesses combine the roles of chairman and CEO, but there is wisdom in separating the two responsibilities. One of the most valuable leadership roles the chairman and the board can play is to build shareholder loyalty, awareness, and cooperation, and to encourage the notion of ?patient capital??that is, family owners? willingness to leave their funds invested in the company so that long-term business goals can be met.

After the founding generation has passed from leadership of the family and the business, no sibling or cousin is likely to have the same ?moral? authority.? It requires the commitment of the entire ownership group to provide the full range of leadership necessary to take both the family and the business to the next level.

Greenpeace activists dump coal at S.Africa utility (AFP)

JOHANNESBURG (AFP) ? Greenpeace activists dumped three trucks of coal in front of the headquarters of South African state utility Eskom Monday to protest what they called its lack of commitment to green energy.

Activists from the global environmental organisation paraded in front of the five tonnes of coal blocking one of the main entrances of Eskom's Johannesburg headquarters, carrying signs criticising the company for not moving fast enough toward green power sources like wind and solar.

South Africa relies on coal for about 90 percent of its electricity.

"To date, Eskom's investments in renewable energy are limited to tiny projects of 100 megawatts of wind and 100 megawatts of solar. This illustrates Eskom's lack of commitment to a sustainable future for South Africa," said Melita Steele, Greenpeace Africa's climate and energy campaigner.

"South Africans can no longer continue paying the price for Eskom's addiction to coal," she added in a statement.

South Africa has announced plans to scale up renewable energy to nine percent of power generation and cut coal's share to 65 percent over the next 20 years.

But Eskom has come in for criticism for charging ahead with construction of two massive new coal-fired power stations, the 4,800-megawatt Kusile plant and the 4,788-megawatt Medupi.

Greenpeace has also lashed out at plans to build 9,600 megawatts of new nuclear capacity in the next two decades.

Eskom is under pressure to boost capacity and rejuvenate an aging power grid after electricity shortages led to widespread blackouts in 2008.

But coal-dependent South Africa is also under a microscope from environmental activists as the host of the next major round of UN climate talks, scheduled for November 28 to December 9 in the eastern port city of Durban.

Many of my clients are professionals in many fields and do their jobs quite well, but they have no idea what the protocol is for dealing with their real estate agent. They have no idea why real estate agents are getting upset with them when all they are trying to do is get information on a home that?s for sale.

Dealing with real estate agents is not hard to do as long as you understand the protocol to use when shopping for a home. Below is a list of 10 tips that will help you work with any real estate agent.

1. You must understand that almost all realtors work on commission basis. There may be a very few that work on salary but none that I know. A realtor may get a contract to sell a home, but if the transaction does not close the agent does not get paid. Many people treat real estate agents as public servants and that they work for free. Realtors do not work for free, so if you intend on not using a realtor in a transaction don?t ask them to work for you.

2. Keep all appointments and be prompt. Respect your agent and use common courtesy. Don?t expect an agent to stop everything they?re doing just to run out to show you a home. They have other clients and family too. If you make an appointment, and something else comes up, just don?t forget about it. Call the agent and inform them that you are going to be late and what time you will arrive. If you are going to be too late just set up another time for another appointment.

3. Choosing a realtor. You must decide whether you are going to deal with the listing agent of a home for sale with no representation, or are you going to find your own real estate agent to work with you? If you are going to hire an agent to work with you, you need to interview several agents to determine which one you feel the most comfortable with. Interviewing to agents from the same company is not a recommended thing to do. Inform the agents that you are interviewing what stage of the interview process you?re in. Are you just starting your interviews or are you at the point of making a decision on which realtor to use.

4. When you are working with a buyer?s agent to not call the listing agent of a home. The listing agent is working for the seller, not a buyer. If you asked the selling agent to also represent you, and the agent decided to represent both you and the seller, the agent will be operating under dual agency. Here in Florida, the agent would have to transfer from a single agent to a transaction broker agent. Most listing agents do not want to do the job of a buyer?s agent. They are just listing agents only.

5. Knowing open house protocol is important. Ask your agent if it?s proper for buyers to attend an open house without their agent. In a lot at areas if you are working with a buyer?s agent it is frowned upon for you to attend an open house without your agent. If you do attend an open house without your buyer?s agent present the business card of the agent you are working with to the agent that is hosting the open house. A lot of realtors who are hosting open houses are also looking for buyers who are not working with an agent. It?s just common courtesy to let them know up front that you already have a buyer?s agent that you are working with. Informing the agent at the open house that you already have a buyer?s agent protects you. Let your agent ask any questions pertaining to the seller and what the seller?s motivations are for selling.

APNewsBreak: Feds drop earlier Bulger case (AP)

BOSTON ? Federal prosecutors have moved to drop a 1994 racketeering indictment against mob boss James "Whitey" Bulger.

Prosecutors in Boston filed the electronic notice Tuesday that they're dismissing the indictment charging Bulger with extortion, loan sharking, witness tampering and conspiracy.

In the notice, U.S. Attorney Carmen Ortiz says prosecutors consider a later 1999 indictment charging Bulger with 19 murders the stronger case. He faces life in prison on those charges.

Bulger fled just before the indictment was handed up in early 1995. He was captured last week after 16 years on the lam.

Family Histories Are Only Part of Genealogy in Your Family Tree ...

I am often asked why I include old history articles and stories on my genealogy website. When I first began compiling my family?s genealogy, I became fascinated with why my ancestors did many of the things they did. Why did they move so frequently? What factors were present that affected their daily lives? How could I really get to know my ancestors?

I have always been fascinated with history. I guess that is one of the reasons I began researching my family history in the first place. As I discovered more and more about my family, I was intrigued with certain aspects of history surrounding the families or the places in which they lived. Soon I discovered that researching the historical accounts and records surrounding a family or place would often yield even more useable information.

For example. My mother was born in 1927 in a little town called Ludwigsruh in what was then Germany. Well, search as I might I could not find this little town. Why? I decided to look at the history of Germany around that time, keeping in mind that WWII changed the lay of the land, so to speak. I discovered that Ludwigsruh was now a sub-division of Gorzow Poland and the name itself was obsolete. I also found some articles that described the invasion of the little town and I discovered that my mother?s homestead became a base for Russian soldiers and that some pretty gruesome things had taken place there. No wonder mother didn?t want to talk about her home!

Reading through old historical records is one thing, but reading literature of the time is another. Literature often reflect the society from which it emerges. You can learn about the way the people lived and in some ways you can walk right into their lives, through the histories left to us.

I recently posted a feature called Women and the War at my genealogy site. Through this accounting I learned a lot about my grandmother and other female family members and the roles they played during war times. I began to understand the frugality of my grandparents generation in a way I never really embraced before.

Not only have I learned a lot about history, I have discovered that my family has evolved into the family it is because of the history they lived through. They were the people of whom the is made. My family helped to shape history, in some cases. This I also learned, not from old documents, but from historical accounts of particular regions where a family member was active in local politics, or perhaps a local church. Their activities, while not notable in a general history, were quite the talk of the town in their day.

Researching the family genealogy, and tracing your ancestry is a wonderful pastime. However, if you are not including research into the history of the times you are researching, you are probably missing a lot of insight into the lives of your family members. It is by discovering how they lived, more than when they lived, that can lead you to a real understanding of who your ancestors really were and why they did many of the things they did. I hope you will take a look at the history, and not just the dates and documents.

The growth of hockey and the increased number of junior and pro-level players from the Pittsburgh area has been well documented over the past decade.

But it's another sport on ice that may end up producing the city's next winter Olympian, possibly as soon as 2014.

Short-track speedskating has developed a small but dedicated following in the Pittsburgh area through the Pittsburgh Speedskating Club, and what the club currently lacks in size, it is making up for in prestige through its skaters' performances, rapidly rising to become one of the country's top clubs of its kind.

With three members of this year's USA Junior National Team among its ranks and a coach ? Kwang Jae Lee ? who recently was picked as a national junior developmental coach by US Speedskating, the sport's national governing body, club officials hope to continue its growth in the upcoming years.

"We get new people all the time who are surprised, because they had no idea there was something like this in Pittsburgh," said Alan Burkholder, the club's president. "We have around 40 members now ? some as young as 6, and our oldest is 57."

"When I came here in May of 2006, I had five or six skaters," said Lee, known to his skaters as ?Coach K,' who works with the club's most advanced skaters. "Now, I have three times as many, 15 or 20, that train hard and go to meets."?

One of the biggest signs of the club's rise in stature occurred last week, as it hosted a USA Junior Category 1 training camp, bringing the top short-track skaters in the country between ages 15 and 19 to Pittsburgh.

The camp, held on the ice at Robert Morris University's Island Sports Center and the Mt. Lebanon Ice Center, was led by Lee and U.S. National Team coach Jae Su Chun and attracted nearly every member of this year's junior national team.

"This camp is the first camp like this, and it is part of our plan for the future," Chun said.?

"I'm very thankful for the skaters coming, and they give me a new feeling of confidence for the future of US Speedskating."

Most notable among the attendees at the camp was 19-year-old Simon Cho, the current world champion in the men's 500-meter and a bronze medalist last year in the 5,000-meter relay the Vancouver Olympics, an event in which he skated alongside U.S. star Apolo Anton Ohno, by far the sport's most famous athlete in this country.

Although Pittsburgh may seem like an odd location to have such a select training camp, Chun sees the city playing a big part in the sport's future.

"Here in Pittsburgh is one of the most important areas for us to develop," he said. "I am very grateful for the Pittsburgh Speedskating Club and Coach K, and also Robert Morris University, who are very important partners to improving speedskating in Pittsburgh."?

Robert Morris' role in the sport grabbing hold locally has been significant, much as it has for hockey and figure skating, because of its Island Sports Center facilities.

With an Olympic-size rink, measuring about 20 feet wider than an NHL rink and the standard rinks at most area facilities, it is one of the few local places where a short-track course can be set up.

"The Olympic-size surface is very meaningful for short-track speedskating, because it leaves more room on the outside of the track," Burkholder said. "That makes it safer when skaters fall, and in short track, there are falls."

That led to the school becoming the first in the United States to establish a club speedskating team in 2009. Lee also coaches the club team, drawing top national talent to attend college while still training for most skaters' ultimate goal, making the U.S. National Team.?

As nice as that facility is, the Pittsburgh Speedskating Club still faces challenges in getting ice time, as the ongoing growth of hockey and other ice sports often leave the club seeking a home and needing to take odd hours, such as 6 to 8 a.m. for the USA Junior Camp's morning sessions.

The club has used five rinks around the city, according to Burkholder, and it has regular slots at the Island Sports Center, Mt. Lebanon and BladeRunners in Warrendale.

"We're still kind of a small, niche sport in the area, so we can't just walk in and demand prime ice," Burkholder said. "We've been creative with some of the rinks to schedule time."

Though scheduling is tough for short-track sessions, aspiring speedskaters who prefer the long-track form of the sport are completely out of luck locally. Adequate long-track facilities are few and far between in the U.S., and western Pennsylvania is not home to one.

"It would be outstanding to have one in the region. We have a dream of long-track in western Pennsylvania, but that's all it is, a dream at this point," Burkholder said.?

Just like how hockey boomed again in the area with the arrival of Sidney Crosby and the resurgence of the Penguins, perhaps the biggest way for short-track to grow in Pittsburgh would be for young people to see local success.

Leading the charge of short-track skaters from this area are the three competitors at the Junior World Championships last February in Courmayeur, Italy: Lexi Burkholder and brothers Cole and John-Henry Krueger, all of Peters Township.

While Cole Krueger, 19, now skates at Robert Morris as he moves into the senior ranks, John-Henry Krueger and Lexi Burkholder, Alan's daughter, were just 15 when they competed in Italy.

That means they have four years left in the junior ranks and have set the bar extremely high for themselves after winning the overall crowns at U.S. Junior Nationals in Saratoga Springs, N.Y.

Although they are two of the top young skaters in the country, qualifying for the 2014 Winter Olympics is Sochi, Russia is quite a lofty dream, considering they will be only 18 when the games are held. Still, reaching the Olympics is any competitive skater's goal, and their coach sees no reason not to strive for it.

"All of my skaters have an Olympic dream, and now, we have a ladies' junior champion and a men's junior champion here in the Pittsburgh club," Lee said. "We're working hard toward the next Olympics. I'm not going to say they will make it (in 2014), but we'll see. They'll be competing for it."

Skating with one the country's top coaches is a huge benefit for Burkholder and Krueger, something noted by the coach they hope to skate for in 2014.

"There is great potential here in Pittsburgh," Chun said. "Coach K has done an amazing job here. This is part of our investment for the future, and I expect a lot from the Pittsburgh club."?

Regardless of whether skaters harbor an Olympic dream, the biggest aim for the Pittsburgh Speedskating Club is to continue to promote the sport in the area, via the club website, www.pittsburghspeedskating.org.
